Peanut Butter Cheesecake Parfait

Sugar free, Low carb and delicious

 You are probably getting the idea by now that I prefer my food sugar free and either low carb, or healthy carb / low fat. In other words no sugar fats and carbs are separate. =) That means finding all new recipes to replace my favorite foods especially desserts. Well we tried one tonight and I think it is a real winner, so I just had to share it right away!

Sorry it is not the best picture, but after the first bite I knew it was a winner and I would want to share it, so I snapped a quick pic so that I could finish eating it. =)
It came about because my husband was eating cheesecake and we wanted some too, but all we had was frozen cream cheese. I figured if I started blending it we could come up with something good and oh boy did we.

Ingredients
  • 1 package frozen cream cheese
  • 1t of peanut flour 
  • 1 handful of almonds
  • Sweetener to taste (I used about 1t of xylitol and 4-5 shakes of NuStevia)
  • Dash of vanilla
  • 1T cream
 I thawed the cream cheese just enough to cut it into chunks. I put everything in the food processor and blended until creamy with chunks of nuts. Taste to make sure it is sweet enough for you, if not just add a little more sweetener. I then scooped it into bowls and put some of my sugar free chocolate sauce on it (Recipe Here) or you could drizzle skinny chocolate on it. Now all you have to do is enjoy!
No peanut flour? Don't worry, just try adding a little peanut butter and omitting some or all of the cream. =) 

I would say this is somewhere between cheesecake and ice cream.

If you eat THM style this would be a heavy S dessert. =)

  2. this sounds just about perfect, and I learned something! I didn't realize you could freeze cream cheese. What a great thing, because I buy it from Costco and can't always manage to use it all before it goes bad!

    1. Glad to be of help. =) When I freeze it, I find it works best for things like cheesecake and desserts like this. The texture after freezing is not the best for spreading on a sandwich or cracker. =)
